Dark Chocolate Pie with Strawberry Vanilla Compote

Ingredients
  1. 1 Wholly Wholesome gluten-free pie crust (prepared according to package instructions)
  2. 1 lb of strawberries, washed and diced
  3. 1 can of full-fat coconut milk (I like Thai Kitchen), refrigerated overnight
  4. 1 bag chocolate chips (I like Enjoy Life because I'm dairy-free)
  5. 5 tablespoons agave, divided (or any liquid sweetener like honey or maple syrup)
  6. 2 teaspoons vanilla extract, divided
  7. 1 teaspoon cornstarch (or arrowroot powder if you'd like to avoid corn)
  8. Pinch of salt
Instructions
  1. Place strawberries in medium-sized saucepan over medium heat. In a small bowl or glass, combine 3 tablespoons of agave with 1 teaspoon cornstarch. Mix until completely smooth. Add to saucepan and stir. Simmer strawberries 9-12 minutes, until soft and sauce has thickened. Once it's there, remove from heat and add one teaspoon of vanilla. Stir well.
  2. While the strawberries are cooking, make your filling. Open the can of coconut milk and scoop out the top layer of cream. Add this to a small saucepan. Discard the remaining water in the can. Add the chocolate chips to the cream and stir. Cook over medium low heat, stirring frequently, until chocolate is almost melted. Once you reach this state, remove from heat. Add a pinch of salt and 2 tablespoons of agave and stir well.
  3. Pour the filling into the pie crust. You can freeze for a minimum of two hours or you can refrigerate overnight (just make sure the pie stays level). Your compote, once finished cooking, can be stored in a glass jar until needed.
  4. When you're ready to eat your pie, allow it to sit at room temperature for 15-20 minutes before cutting. Top with your compote and enjoy!
