Dad's Black Bean Burgers

As seen on Fox21 News! This is a great recipe for Father's Day or any cookout. It's a hearty burger patty that's quick and simple to assemble (great for kids to help with!).

Ingredients
  1. 2 (15 oz.) cans Allen's Seasoned Black Beans - drained, rinsed and patted dry
  2. 1 green bell pepper, diced
  3. 1 onion, diced
  4. 6 cloves garlic, minced
  5. 2 eggs (or flax eggs*)
  6. 2 Tbsp. chili powder (or whatever seasoning you like)
  7. 1 1/2 Tbsp. cumin
  8. 2 tsp. chili sauce, hot sauce or BBQ sauce
  9. 1/2 cup bread crumbs
Instructions
  1. Preheat an outdoor grill for high heat and lightly oil a sheet of aluminum foil (or use the same method with a griddle for indoor cooking).
  2. In a medium bowl (one with a wide, flat bottom helps), mash the beans with a fork or potato masher until thick and pasty.
  3. In a food processor, finely chop bell pepper, onion and garlic. Stir into mashed beans.
  4. In a small bowl, stir together egg, seasoning and sauce. Stir the mixture into the mashed beans. Slowly stir bread crumbs into bean mixture until it's sticky and holds together (you may not need all the bread crumbs).
  5. Divide mixture into 8 patties. Place patties on foil and grill about 8 minutes on each side.
Notes
  1. Patties can be refrigerated and stored a day ahead.
  2. * A flax egg is a great alternative to eggs when you're in need of a binding ingredient. Whether you're vegan, watching your cholesterol or egg-intolerant, this is a nifty trick. Once the mixture has sat, you can combine it with the rest of the ingredients where egg is called for.
  3. 1 flax egg = 1 egg
  4. Mix 1 Tbsp. ground flax with 2 Tbsp. warm water. Let sit for 5 minutes.
